During hunting season I spend a lot of time camping and therefore cooking on a campfire. I recently became interested in cooking directly on the coals with cast iron and thought it would be fun to document some of the things I try. So here goes the first edition of Campfire Cooking.
The basic idea is sauté a small onion, a half pound of thick sliced applewood smoked bacon, a couple of chopped garlic pods, and a whole jalapeño until soft. Add one can of chopped tomatoes with green chiles and let cook for just a few minutes to mix. Then pour In a couple of Shiner Bock beers and a small bag of dry pinto beans. I also like to add about 4-5 tablespoons of store bought pinto bean seasoning. Cook until beans are soft. I cooked mine about 2 1/2 hours at a fairly high boil. This is the basic recipe but I also added two whole links of pork gator sausage to cook in the pot of beans for about 20 mins. I pulled them out, sliced them up and let them stew in the beans for another 15 mins or so.
That's it! It's very easy and just takes time and some good hot coals. I just sit my cast iron pot directly in a bed of hot coals and then add a few more around the base.
